Ceviche

Ingredients:
3/4 lb fresh white fish, such as snapper or sea bass.
1/2 cup fresh lime juice
1 medium tomato, chopped
2 serrano chiles, minced with seeds
1/4 white onion, finely chopped
1/4 cup chopped cilantro
1/2 tsp dried oregano
1 avocado, diced (1/2 inch pieces)
1 Tsp olive oil
1/2 teaspoon salt

Preparation:
Trim off any fat or skin from fish. Remove any bones, and cut fish into 1/2 inch squares. Put the fish into glass bowl and add lime juice, make sure fish is covered completely in lime juice. Cover bowl and refigerate 2-3 hours. Drain the lime juice and transfer fish to serving bowl. Add remaining ingredients and stir. Serve chilled.
