Authentic Mexican Recipes like Chicken Quesadillas are usually quite easy to make. Using fresh ingredients is the key to having great tasting Mexican food, which we can't stress enough here. Try this simple recipe and you will be on your way to tasting some great Mexican food tonight.

Chicken Quesadillas

Ingredients:
3/4 lb chicken tenderloin pieces
1/2 tsp salt
1 Tsp vegetable oil
1/2 cup white onion finely chopped
1/4 cup salsa fresca
8 flour tortillas (6 inch)
1 cup grated Monterey Jack Cheese
Additional oil for frying

Preparation:
Sprinkle salt on chicken. Heat the oil in med fry pan over med-high heat. Cook chicken 3 to 4 minutes until golden brown. Remove chicken from pan. Once cooled, shred chicken into strips. In same pan, cook onions about 2 minutes. Mix onions, chicken and salsa together. To arrange quesadillas, lay out tortilla flat and sprinkle about 2 Tsp cheese, layer with chicken mixture, and more cheese. Fold in half or place 2nd tortilla on top. Cook in remaining vegetable oil each quesadilla one at a time until lightly browned and cheese is melted. Serve with guacamole, sour cream and salsa fresca.
