Authentic Mexican Recipes like Chicken Taquitos are usually quite easy to make. Using fresh ingredients is the key to having great tasting Mexican food, which we can't stress enough here. Try this simple recipe and you will be on your way to tasting some great Mexican food tonight.

Chicken Taquitos

Ingredients:
1 1/ 4 lb skinless boneless chicken breast
1 1/2 cups chicken broth
8 Tsp vegetable oil
1 med white onion, finely chopped
2 tablespoons fresh block cream cheese
1/2 tsp dried oregano
1 tsp salt
1/8 tsp ground pepper
12 (6 inch) corn torillas

Preparation:
In medium sauce pan place chicken and chicken broth. Bring to a boil at medium-high heat, let simmer about 15 minutes until chicken is cooked throughout. Once cooled down, shred chicken by hand into thin strips and set aside. In a medium fry pan, cook onions and oregano over med-high heat until onions are limp. Put onions in bowl with chicken, mix in cream cheese, salt and papper, set aside. Heat 2 Tsp of oil in medium fry pan at med-high heat. Place tortillas one at a time in oil and flip for about 2 seconds. Set each in a paper towels to drain. To fill, place about 2 Tsp chicken mixture in tortilla and roll up tightly. Use toothpick to secure in place. In a medium fry pan, heat remaining oil on med-high and fry 2 at a time, with the seam side down until browned on both sides. Arrange on a plate and serve with sour cream and salsa.
