Authentic Mexican Recipes like Chicken Tostados are usually quite easy to make. Using fresh ingredients is the key to having great tasting Mexican food, which we can't stress enough here. Try this simple recipe and you will be on your way to tasting some great Mexican food tonight.

Chicken Tostados

Ingredients:
4 (6 inch) corn tortillas
1/2 cub vegetable oil
1/2 tsp dried oregano
1/2 tsp ground cumin
3/4 tsp salt
1/2 tsp freshly ground pepper
4 skinless boneless chicken breasts
2 cups iceberg lettuce shredded
1 cup shredded monerey jack cheese
2 serrano chiles, finely chopped w/ seeds
1/2 cup chopped cilantro
3 Tsp olive oil
1 cup salsa fresca (see salsa recipes)
1/2 cup sour cream

Preparation:
Heat oil in medium pan using med-high heat. Fry tortillas 1 at a time, turning over with tongs until nicely crisp. Set aside to drain on rack or paper towels.
Combine oregano, cumin, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Rub seasonings on chicken. Drain all but about 1 teaspoon of oil from pan and cook chicken in remaining oil 8 to 10 minutes or until cooked. Toss together in mixing bowl, lettuce, cheese, cilantro, olive oil, remaining salt and pepper. To prepare tostados, place equal amounts of chicken and vegetable/cheese mix on tortillas. Serve with sour cream and salsa.
