Authentic Mexican Recipes like Nachos are usually quite easy to make. Using fresh ingredients is the key to having great tasting Mexican food, which we can't stress enough here. Try this simple recipe and you will be on your way to tasting some great Mexican food tonight.

Nachos

Ingredients:
1 bag of corn tortilla chips
16 ounce can spicy refried beans
1 cup shredded monterey jack cheese
1 cup shredded cheddar cheese
1 avocado finely diced
6 jars picled jalapeno chiles (en escabeche), seeded and cut into strips
1 cup sour cream
1/2 cup salsa fresca

Optionally add beef or chicken if desired

Preparation:
Turn on broiler to medium. Prepare cookie sheet with foil and spread tortilla chips evenly. Spread a small amount of beans on each chip and then layer cheeses over all the chips. Broil until the cheese melts. Transfer to serviing dish. Arrange the jalapeno's and diced avocado pieces. Add the optional chicken or beef. Then top with sour cream and salsa. Don't forget the cervezas!
