Puerto Vallarto Style Shrimp

Ingredients:
1 lb medium shrimp, peeled and deveined
1 garlic clove finely chopped
1/2 tsp salt
1/2 cup cider vinegar
2 ancho chiles (remove stems and seeds)
1 tsp dried oregano
1/2 cup coarsely chopped white onion
1 Tsp finely chopped cilantro
1 tsp brown sugar
1 Tsp cilantro, finely chopped

Preparation:
In a medium size pan, heat oil. Add to the pan the shrimp, garlic and 1/4 tsp salt. Cook 3 to 4 minutes or until shrimp turn pink. Remove shrimp to a bowl, cover and refrigerate. Clean pan, or use another similar size pan and heat up vinegar until warm. Cut ancho chiles into pieces and soak in the vinegar about 20 minutes. Place soaked chiles in blender with oregano, onion, sugar, and 2 tablespoons hot water. Discard the vinegar. Puree until smooth. Cook the puree mixture about 5 minutes or until it thickens. Place in bowl and allow to cool. To serve, pour sauce mixture onto plate, arrange shrimp on top and use toothpicks to serve. Scatter cilantro on top as a garnish.
