Authentic Mexican Recipes like SHRIMP CEVICHE are usually quite easy to make. Using fresh ingredients is the key to having great tasting Mexican food, which we can't stress enough here. Try this simple recipe and you will be on your way to tasting some great Mexican food tonight.

Shrimp Ceviche

Ingredients:
1 lb large shrimp, peeled and deveined
1 medium tomato, chopped
1/2 medium white onion, finely chopped
1 jar pickled jalapeno chile (in escabeche)
1/2 cup chopped cilantro
1/2 cup lime juice (remember! fresh!)
salt and pepper to taste
1 avacado diced
2 teaspoons olive oil

Preparation:
Boil shrimp for 45 seconds and immediatly rinse in cold water (yes, this isn't truly ceviche, but it takes the risk out of getting sick). Place shrimp in large mixing bowl. Add tomato, onion, jalapeno, cilantro, lime juice, salt and papper. Stir and refrigerate 3 to 4 hours. Stir in olive oil and avocado prior to serving. Usually served in glass bowls (like shrimp cocktail).

Servings: 4 to 6
